Made in the traditional method from estate-grown Leon Millot that was gently pressed then cool-fermented in stainless steel. The base wine was aged on the lees for seven months then bottled with a touch of sugar and yeast for a second ferment. It was then aged an additional nine months on the lees in bottle before disgorge and a light dosage.
On the nose, this wine shows notes of cherry, raspberry, and chokecherry with a hint of thyme. The palate is just off-dry with fresh fruit and herbal notes leading to a crisp red-fruit finish
