Waiting and watching for the perfect moment, the icewine harvest begins in late fall after temperatures
have dipped to -10°C. With the Vidal grapes evenly frozen they are ready to be handpicked from the vines
and gently pressed to extract their precious juice. Then, after an additional four years or more of careful aging, the Borealis icewine is finally ready.
“Deep golden color with an amber hue. On the nose, suggestions of ripe peaches and dried apricots
are complicated by citrus rind undertones. On the palate, the wine displays tremendous texture and
concentration, but manages to remain utterly bright and balanced, thanks to the signature freshness
provided by our maritime climate.”
