Nova Scotia’s cool climate and ocean-influenced terroir provides the ideal conditions for expressive aromatic whites and lively sparkling wines. This Bubbly White from Lightfoot & Wolfville celebrates and combines the essence of both these signature styles as a fresh, fragrant, Germanic-inspired aromatic sparkling.
A rare late spring frost following bud break in the spring of 2018 decimated tender vine growth, devastating grape yields across Nova Scotia. In this unusual year, this blend was supplemented with grapes from industry colleagues in the Niagara region, sourced from growers who share the same philosophies for ultra-premium quality, sustainable winegrowing practices. The Nova Scotia grown components were lower yielding as a result of the frost, enhancing aromatic intensity and ultimately providing the resultant blend with its signature Nova Scotia aromatic.
Each contributing variety was handpicked and fermented separately in stainless steel. A base wine blend was created and transferred to pressure tank for secondary fermentation via the Charmat Method, providing a delicate and persistent bubble. Given the desired aromatic style, lees contact time was kept short to preserve freshness and purity of primary fruit flavour.

An aromatic style of sparkling with fragrant notes of juicy pear, zesty gooseberry and elderflower. A flinty mineral edge supports the fresh primary fruit on the palate. Lively and fresh with a delightful spritzy effervescence.
A great aperitif and very versatile with food. Brunch and picnic-lunch friendly.
