100% Vidal Blanc grapes
This wine was made from grapes harvested mid-December in frigid conditions. (about -14ºC) After pressing, the concentrated icewine juice is released with over 40% sugar and plenty of acid and flavour to keep the wine balanced. This wine was fermented in 6 separate lots with 4 specialty dessert wine yeast strains from around the world. The result is an incredibly rich and intense wine worthy of savouring.
Look for notes of nectarine, dried apricot, and delicious apple, with cinnamon and nutmeg on the nose. The palate reveals ripe fruit with apple and nectarine leading to spice and lees with an incredibly long and surprisingly refreshing finish.
Suggested Food Pairings:
This wine pairs well with foie gras, pâté, apple crumble, or vanilla panna cotta. For a simple pairing enjoy it with, or drizzled on, a bowl of ice cream.
